Directions

Step 1
Preheat the oven to 400 degrees F. / 204 degrees C.
Step 2
Peel the sweet potatoes and cut like fries. Add to a baking tray, season with oil, and bake for 25 minutes.
Step 3
While the fries are baking make the rice. Rinse the rice for about 1 minute, until the water runs clear and set aside. In a pot, add the water, salt, pepper, cumin, cilantro, and optional oil. Add in the rinsed rice. Cover the pot and cook on low for 15 minutes. Once done, remove from heat and let sit covered for 10 minutes. Fluff with a fork when done.
